From Scraps to Soil: How We Composted 270 Tons in 2025

At Soupergirl, “just good food” doesn’t stop at the ingredients you see in the container. It’s about what happens behind the scenes, too.

In 2025, we composted 270 tons of food scraps.

That’s not a typo.

Every day, we’re chopping thousands of pounds of fresh vegetables (and yes, some fruits). Carrot peels, onion skins, herb stems — the parts that don’t make it into your soup still have a purpose. Instead of sending that waste to a landfill, we send it somewhere better.

Through our partnership with Compost Cab, those scraps are picked up and turned into nutrient-rich compost that goes back into the soil. What was once waste becomes something that helps grow more food. It’s a full-circle system — and one we’re proud to be part of.

Because here’s the reality: when food waste ends up in landfills, it creates harmful emissions. But when it’s composted, it becomes part of the solution.

As Compost Cab puts it:
A daily, affirmative act of sustainability. Keeping food waste out of landfills is one of the most direct and straightforward ways we have to take direct action against global warming. Less food waste = lower emissions. It’s that simple.

We believe that!

And we believe "small" (ok, 270 tons is NOT small!), consistent actions add up.



In 2024, we composted 80 tons. In 2025, we more than tripled that. Not because it’s trendy. Not because it’s easy. But because it’s the right thing to do!

This is what “good” means to us:

  • Treating our employees and partners with dignity and respect
  • And taking responsibility for what happens after the chopping board

So the next time you heat up a bowl of Soupergirl, or did into some ofour fresh salsa, know this — it’s not just good for you. It’s part of something bigger.

Sara Polon (Soupergirl), Co-Founder and CEO, has the attention span of a gnat. Therefore, her post-college career path took many meandering twists and turns including working at an Internet start up, leading tours through the Middle East, and several years as a stand-up comic in New York.

In 2008, after reading Michael Pollan's book, The Omnivore's Dilemma, she founded Soupergirl along with her mom, Marilyn Polon. Sara is passionate about upending the industrialization of our food system. She believes deeply that consumers can make food choices that better themselves as well as the world. She drinks an average of five cups of coffee a day - usually black. In her spare time she enjoys biking, hiking, hanging out with her nieces, and drinking even more coffee.
