I'm going to go a little deep here. What does "Southwestern" really mean when it comes to food? A touch of spice? A little oregano? Does a picture of a smiling cactus have to appear somewhere on the menu? Usually wearing a cowboy hat? I feel like there are a lot of pastels in the Southwest. Or maybe just in Albuquerque. Which brings me to this soup. Which has nothing to do with pastels. But it does have split peas, corn, bell peppers, chili powder, cumin, oregano, and more. We call it Southwestern Split Pea because we have run out of other creative names. What would you call it? Delicious split pea with summer vegetables and spices? Please. No one is going to buy that soup. And they should. Because it turns out southwestern style food is awesome.

    Empty desired amount into a pot and cover. Heat slowly over a low simmer for 3-4 minutes, stirring regularly.


    Microwave
    Empty contents into a microwave-safe bowl, cover with a paper towel, and heat on high for 2 minutes. Stir once, and repeat.
