Soupergirl's Take

Soupergirl's Take

I'm going to go a little deep here. What does "Southwestern" really mean when it comes to food? A touch of spice? A little oregano? Does a picture of a smiling cactus have to appear somewhere on the menu? Usually wearing a cowboy hat? I feel like there are a lot of pastels in the Southwest. Or maybe just in Albuquerque. Which brings me to this soup. Which has nothing to do with pastels. But it does have split peas, corn, bell peppers, chili powder, cumin, oregano, and more. We call it Southwestern Split Pea because we have run out of other creative names. What would you call it? Delicious split pea with summer vegetables and spices? Please. No one is going to buy that soup. And they should. Because it turns out southwestern style food is awesome.

Homemade Vegetable Broth (water, carrot, celery, onion, parsley, thyme, bay leaf), Yellow Split Peas, Carrot, Onion, Green Bell Pepper, Celery, Diced Tomato (Diced Tomatoes, Tomato Juice, Sea Salt, Calcium Chloride and Citric Acid), Garlic, Extra Virgin Olive Oil, Kosher Salt, Chipotle Pepper, Cumin, Oregano, Black Pepper
