Hello Loyal Soup People! I just read about two new studies that show that eating a plant-based diet can help prevent and fight type 2 diabetes – regardless of body mass index. According to research published in both the European Journal of Epidemiology as well as Diabetes, participants in two studies that followed vegan diets had clear improvements over those that followed their regular diets.
My favorite quote in the article (published in Duke Medicine Health News – quoting one of researchers) was: “‘Being overweight places a huge demand on the insulin-producing beta-cells in the pancreas… By the time type 2 diabetes is diagnosed, about 50 percent of the insulin-producing beta cells are gone, and their number and function keeps declining as time goes on. Many millions of dollars are being invested into research to find a drug that will at least slow down the progress of the beta-cell dysfunction and eventual failure.’ It looks like a plant-based diet may do the trick.”
So often we are looking for quick fixes, pills, or modern science to cure us. However, quite often the solution is right in front of us. Overhauling our approach to food can have a profound impact on our health. It can potentially cure some of our illnesses. A plant-based diet, in particular, seems to be a key element in keeping us healthy (and could be the key to saving the planet… more on that next week)!
